BACON EGG AND HASH BROWN CASSEROLE

 

*Ingredients:

° 1/2 pound ground bacon
°1 onion, diced (1/2 cup)
° 1 bag (30 ounces) brown potatoes, cut and frozen country-style, thawed and drained
° 2 c cheddar cheese (8 oz)
° 1/4 c Parmesan cheese
° 9 egg
° 1 1/4 c milk
° 1 package (8 ounces) sour cream
°1 teaspoon salt
°1 teaspoon ground mustard
° 1/4 teaspoon pepper
° 1/2 C corn flakes crumbs
°2 teaspoons melted butter

* Methods :

Preheat oven 350 degrees F . Spray a 13 x 9 (3 quart) glass baking sheet with cooking spray.
In 10-inch skillet, cooking bacon & onion on medium-high heat for 10 min, stirring occasionally, until bacon is softened and onion is tender; Lay out paper towels.

In a bowl, mix together bacon, potatoes, and cheese mixture. spoon in baking dish. In the same bowl, whisk together eggs, milk, sour cream, salt, mustard, and pepper using a fork or wire whisk until well blended. Pour over potato mixture.

Baking, uncovered, 35 min. In a small bowl, mix the cornstarch and butter. sprinkle it on. Bake for 10 to 15 min
