° 1 pound lean ground beef
° 1 medium onion, finely minced
° salt and ground black pepper to taste

° 1½ tablespoons taco seasoning mix
° 1 (15 oz) can dark red beans
°½ bag (12 ounces) nacho cheese flavored corn chips (such as Doritos®), crushed
° 1 large romaine lettuce, chopped
° 1½ medium tomatoes, diced
° ½ cup grated cheddar cheese, or more to taste
° ½ cup Catalina dressing, or to taste

Heat a large non-stick skillet over medium to medium-high heat and sauté the ground beef, diced onion, salt and pepper until the ground beef is browned and no longer pink and the onions are soft. tender, about 10 minutes. Add 1/4 cup water and the meat taco seasoning. Stir to coat and simmer 1 minute to thicken. Let cool while you prepare the salad.
Add kidney beans, crushed chips, lettuce, tomatoes, cheddar cheese and dressing to a large bowl. Top with meat mixture and toss gently to combine. Serve immediately.
