These “brownies” have a bright, fresh lemon flavour. It’s a perfect dessert for any season, but it’s especially refreshing in spring or summer!
° 1/2 cup unsalted butter, soft
° 3/4 cup flour
° 2 large eggs
° 2 tablespoons lemon peel
° 2 tablespoons lemon juice
° 3/4 cup granulated sugar
° 1/4 teaspoon sea salt
+Tart lemon glaze:
° 4 tablespoons lemon juice
° 8 teaspoons lemon peel
° 1 cup powdered sugar

Heat the oven to 350 degrees.
Grease an 8″ x 8″ baking dish with butter and set aside.
Peel and juice two lemons and set aside.
In the bowl of an electric mixer fitted with the paddle attachment, whisk together the flour, sugar, salt, and softened butter until combined.
In a separate bowl, whisk eggs, lemon peel, and lemon juice together until combined.
Pour into the flour mixture and beat for 2 minutes on medium speed until smooth and creamy.
Pour into a baking dish and bake for 23-25 minutes, it should turn golden around the edges.
Allow it to cool completely before glazing. Don’t over-bake or the bars will dry out.
Strain the powdered sugar and beat with lemon peel and juice.
Spread the glaze over the brownies with a rubber spatula and let it set.
Cut into bars and serve.
