Ingredients
2 tablespoons of the olive oil
2⁄3 cups of finely chopped white onion
1 large minced garlic clove
11⁄2 cup of celery finely chopped 2 large stalks
2⁄3 cups of diced carrots
250 grams Lentils (approximately 1-1/8 cups) washed and rinsed
6 Cups Of Chicken Broth *
2 branches of finely chopped parsley
Salt and pepper to taste.
Lemon slices to serve
1-Heat the olive oil in a pan and sauté the onions and garlic for 5 minutes over medium heat.
2- Add celery and carrots and cook for 10 minutes at lower temperature.
3-Add the drained lentils, 6 cups of chicken broth and parsley. Bring to boil and then slow the fire. Cook for 25-30 minutes. Season the soup with salt and pepper.
4- Serve your lentil soup in small bowls, add a few drops of lemon juice and enjoy!
*Nota
Homemade chicken broth is the best option for making this soup, but you can substitute it with 6 cups of water and 2 cubes of chicken broth.
