Cajun Shrimp and Sausage Pasta

Ingredients You’ll Need:

  • 1 lb. large shrimp (peeled and deveined)
  • Kosher salt and fresh cracked black pepper (to taste)
  • 1 teaspoon Cajun or Creole seasoning
  • 1/2 teaspoon dried Oregano
  • 2 tablespoons Olive oil
  • 6 oz andouille or smoked sausage (thinly sliced)
  • 10 ounces fettuccine pasta
  • ½ yellow onion (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 4 teaspoons Cajun or Creole seasoning
  • 1 teaspoon brown sugar
  • 2-3 cloves garlic (chopped)
  • ½ cup crushed tomatoes
  • 1 cup chicken broth (sodium free)
  • 1 cup heavy cream
  • 2/3 cup Grated Parmesan
  • 1 tbsp parsley (chopped)

  1. Season the shrimp with salt, pepper, Cajun seasoning, and Oregano, ensuring they are well coated. Heat a large skillet over medium-high heat and drizzle the bottom with olive oil. Add shrimp and cook for 2 minutes on each side, then set aside.
  2. Drizzle the skillet with a bit more olive oil and add the sausage, cooking until well caramelized. This should take around 4 – 5 minutes. Once done, set this aside as well.
  3. Cook the pasta in salted boiling water until it’s al dente. Lower the heat to medium and add a bit more olive oil to the pan, along with the onion, red bell pepper, Cajun seasoning, brown sugar, and a generous pinch of salt. Sauté until the onion and pepper have softened a bit.
  4. Next, add the garlic to the pan and cook until it’s fragrant (about 30 seconds). Then, add the crushed tomatoes, chicken broth, and heavy cream. Bring this mixture to a simmer, stirring and scraping up any brown bits from the bottom of the pan.
  5. When the mixture is simmering, add the Parmesan and stir it into the sauce. Then, add the cooked pasta and sausage, stirring to combine and heat through for 2 – 3 minutes. Season with salt and pepper to taste.
  6. Finally, add the cooked shrimp back into the mixture. Serve your delicious Cajun shrimp pasta with chopped parsley on top.
