Ingredients:
For the base:
200 gm graham cracker, crushed
1/4 cup of granulated sugar
1/2 cup of melted butter
For the cinnamon roll layer:
1/2 cup butter, melted
1/2 cup of brown sugar
1 1/2 tablespoons of cinnamon powder
For the cheesecake filling:
900 g cream cheese, at room temperature
1 cup of granulated sugar
3 large eggs
1 cup of sour cream
2 teaspoons vanilla extract
2 tablespoons of all-purpose flour
For the cream cheese frosting:
250 g cream cheese, at room temperature
1/4 cup butter, at room temperature
2 cups of icing sugar
1 teaspoon of vanilla extract
2-3 tablespoons milk (optional, to adjust consistency)
Instructions:
Preheat the oven: Preheat your oven to 160°C. Grease a 23 cm diameter detachable mold and line the base with parchment paper.
Prepare the base:
Mix crushed cookies, sugar and melted butter until well combined.
Press the mixture into the bottom of the prepared mold. Refresh while you prepare the rest.
Prep the cinnamon roll layer:
In a small bowl, mix the melted butter, brown sugar and cinnamon until well combined.
Prepare the cheesecake filling:
In a large bowl, beat the cream cheese and granulated sugar until the mixture is smooth and fluffy.
Add the eggs one by one, beating well after each addition.
Incorporate sour cream and vanilla extract.
Add flour and mix until well combined.
Assemble the cheesecake:
Pour half of the cheesecake filling over the cookie base in the prepared mold.
Sprinkle half of the cinnamon roll mix over the cheesecake filling.
Pour the rest of the cheesecake filling on top and smooth the surface.
Sprinkle the rest of the cinnamon roll mixture onto the top and use a knife to swirl the batter, creating a marbled effect.
Baking The Cheesecake:
Bake in the preheated oven for 50-60 minutes, or until the center is almost coated but still slightly shaky.
Turn off the oven and let the cheesecake cool inside the oven with the door wide open for 1 hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours, or preferably overnight.
Prepare the cream cheese frosting:
In a large bowl, beat the cream cheese and butter until soft and fluffy.
Add the icing sugar and vanilla extract and beat until the icing is smooth and creamy. If the icing is too thick, add 2-3 tablespoons of milk to adjust the consistency.
Serve:
Spread the cream cheese frosting over the chilled cheesecake.
Decorate with a little cinnamon powder if you wish..
