Cheesy Stuffed Meatloaf Bites

Ingredients:

2 pounds ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup milk
1 large egg
1/4 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried oregano
1/2 teaspoon salt
1/2 teaspoon black pepper
4 ounces mozzarella cheese, cut into small cubes
1/4 cup grated Parmesan cheese
Fresh parsley, chopped for garnish

Directions:

Preheat your oven to 375°F (190°C). Lightly grease a mini muffin tin or a baking sheet.
In a large bowl, combine the ground beef, ground pork, finely chopped onion, minced garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper. Mix until well combined.
Take a small portion of the meat mixture and flatten it in your hand. Place a cube of mozzarella cheese in the center and fold the meat mixture around it to form a small meatloaf bite. Ensure the cheese is fully enclosed. Repeat with the remaining meat mixture and cheese cubes.
Place the meatloaf bites in the mini muffin tin or on the baking sheet, making sure they are spaced evenly apart.
Sprinkle the grated Parmesan cheese over the tops of the meatloaf bites.
Bake in the preheated oven for 20-25 minutes, or until the meatloaf bites are cooked through and the cheese is melted and bubbly.
Remove from the oven and let cool slightly before serving.
Garnish with fresh parsley and serve hot.
