Elegant Jungle Roll Cake black

Ingredients:

4 large eggs
1/4 cup of granulated sugar
1/3 cup all-purpose flour
1/4 cup cocoa powder
1 teaspoon of baking powder
3/4 cup thick cream
1/4 cup of powdered sugar
1/2 cup dark chocolate, chopped
1/2 cup fresh boneless cherries
1/4 cup of raspberries
1 teaspoon of vanilla extract

Preheat your oven to 180°C (350°F). Cover a baking tray with parchment paper.
In a large bowl, beat eggs and granulated sugar until soft and fluffy.
Sift the flour, cocoa powder and baking powder in the egg mixture and mix gently until combined.
Pour the batter into the prepared baking tray, distributing it evenly. Bake for 10-12 minutes, or until inserting a chopstick in the center, it comes out clean.
While baking the cake, beat the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
Once the cake is ready, place it on a clean kitchen towel sprinkled with glazing sugar. Gently remove the scroll paper.
While the cake is still hot, roll it with a towel inside and let it cool completely.
Unrolls the cooled sponge cake and spreads a uniform layer of whipped cream onto the surface. Sprinkle with chopped dark chocolate, cherries and raspberries.
Roll the cake well and place it with the seam down in a serving fountain. Refresh for at least 1 hour before serving.
Decorate the cake with chocolate chips, fresh cherries and raspberries before cutting and serving.
