Ingredients
Cake
- 2 cups flour
- 2 cups sugar
- 1 cup cocoa powder
- 2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 1 cup buttermilk (room temperature)
- 1/2 cup vegetable oil
- 2 eggs (room temperature)
- 2 tsp vanilla
- 1 cup boiling water
- 1/2 cup black food coloring
Frosting:
- 1 cup butter (softened)
- 4 cups powdered sugar
- 1/2 cup cocoa powder
- 1/4 cup heavy cream
- 2 tsp vanilla
- 1/2 cup blackberry jam
Garnish:
- Fresh blackberries
- Chocolate chips Bitter
- Mint Leaves
Instructions
- Preheat oven to 350°F (175°C). Grease and flour three 8-inch pans.
- Sift together flour, sugar, cocoa, baking powder, baking soda, and salt.
- Mix buttermilk, oil, eggs, and vanilla. Add to dry ingredients.
- Add boiling water and food coloring. Mix until smooth.
- Divide batter into pans. Bake 30-35 minutes. Cool.
- Cream: Cream butter, add sugar and cocoa. Add cream and vanilla.
- Assemble cake with layers of blackberry jam. Top with cream.
- Garnish with blackberries, sprinkles, and mint.
