Luxurious Black Velvet Cake

Ingredients

Cake

  • 2 cups flour
  • 2 cups sugar
  • 1 cup cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup buttermilk (room temperature)
  • 1/2 cup vegetable oil
  • 2 eggs (room temperature)
  • 2 tsp vanilla
  • 1 cup boiling water
  • 1/2 cup black food coloring

Frosting:

  • 1 cup butter (softened)
  • 4 cups powdered sugar
  • 1/2 cup cocoa powder
  • 1/4 cup heavy cream
  • 2 tsp vanilla
  • 1/2 cup blackberry jam

Garnish:

  • Fresh blackberries
  • Chocolate chips Bitter
  • Mint Leaves

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour three 8-inch pans.
  2. Sift together flour, sugar, cocoa, baking powder, baking soda, and salt.
  3. Mix buttermilk, oil, eggs, and vanilla. Add to dry ingredients.
  4. Add boiling water and food coloring. Mix until smooth.
  5. Divide batter into pans. Bake 30-35 minutes. Cool.
  6. Cream: Cream butter, add sugar and cocoa. Add cream and vanilla.
  7. Assemble cake with layers of blackberry jam. Top with cream.
  8. Garnish with blackberries, sprinkles, and mint.
