Captain D’s Batter Dipped Fish

Ingredients:

1 1/2 pounds white fish fillets (such as cod or haddock)
1 cup all-purpose flour
1/2 cup cornstarch
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 cup cold sparkling water
Vegetable oil, for frying
Lemon wedges, for serving
Tartar sauce, for serving

Instructions:

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C).
In a large bowl, whisk together the flour, cornstarch, baking powder, salt, paprika, garlic powder, and onion powder.
Gradually whisk in the cold sparkling water until the batter is smooth and well combined.
Pat the fish fillets dry with paper towels and lightly coat them with flour. Shake off any excess flour.
Dip each fish fillet into the batter, allowing any excess to drip off.
Carefully place the battered fish into the hot oil, frying in batches to avoid overcrowding.
Fry the fish for 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.
Serve the fish hot with lemon wedges and tartar sauce.
