Loaded Baked Potato with Steak Bites

Ingredients:

4 large russet potatoes
1 lb steak (cut into bite-sized pieces)
4 tbsp butter (divided)
4 garlic cloves (minced)
1/2 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup bacon bits (cooked)
2 tbsp olive oil
Salt and pepper (to taste)
2 tbsp green onions (chopped)
Instructions:

1️⃣ Preheat oven to 400°F (200°C). Pierce potatoes with a fork and bake for 45-60 minutes until soft.
2️⃣ Season steak bites with salt and pepper. Heat olive oil and 2 tbsp butter in a pan and sear steak for 3-4 minutes until browned. Remove from heat and set aside.
3️⃣ Once potatoes are done, cut them open and fluff the insides with a fork.
4️⃣ Top each potato with sour cream, cheddar cheese, bacon bits, and steak bites.
5️⃣ Melt the remaining butter with garlic, then drizzle over the loaded potatoes. Garnish with green onions.

Notes:

Swap cheddar for any cheese you like, or add jalapeños for a spicy kick.
Serve with a side salad for a complete meal.
