Ingredients:
3-4 lbs beef chuck roast
1 tbsp olive oil
1 onion, chopped
4 garlic cloves, minced
4 cups beef broth
2 cups carrots, chopped
2 cups potatoes, chopped (for roast)
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
4 large potatoes (for mashed potatoes)
½ cup milk
¼ cup butter
Salt and pepper to taste (for mashed potatoes)
Instructions:
Heat olive oil in a large pot, season roast with salt and pepper, and sear on all sides.
Add onion and garlic, cooking until soft.
Pour in beef broth, add carrots, potatoes (for roast), thyme, and rosemary.
Cover and simmer for 3-4 hours until the roast is tender.
Meanwhile, boil and mash potatoes with butter, milk, salt, and pepper.
Serve the pot roast over the mashed potatoes.
Notes:
You can add celery or mushrooms to the pot roast for more flavor.
