Pineapple Coconut “God Bless America ” Cake

Ingredients:

  • 1 can (20 oz) crushed pineapple (with juice)
  • 2 eggs
  • 1/4 cup oil
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 cups flour
  • 2 tsp baking soda
  • 1/2 tsp salt

Icing:

  • 1 can (12 oz) evaporated milk
  • 1 cup butter
  • 1 1/2 cups sugar
  • 2 cups shredded coconut
  • 1 cup chopped pecans
  • 1 tsp vanilla
  • 1/4 tsp salt

Instructions:
1 Preheat oven to 350ºF. Grease a 9×13 dish.
3 Mix cake ingredients, pour into dish, bake for 25-30 mins.
3 Boil icing ingredients, simmer for 10 mins, stir in coconut & pecans.
4 Pour icing over hot cake. Let cool, then enjoy
