Ingredients
1 lb ground beef (or turkey)
1 medium onion, chopped
2 cloves garlic, minced
1 cup green bell pepper, chopped
1 cup red bell pepper, chopped
1 can (14.5 oz) diced tomatoes, undrained
1 can (15 oz) tomato sauce
4 cups beef broth (or vegetable broth)
1 cup cooked rice (white or brown)
2 teaspoons Italian seasoning
Salt and pepper to taste
Olive oil for cooking
Fresh parsley for garnish (optional)
Instructions
Cook the Meat:
In a large pot, heat a little olive oil over medium heat. Add the ground beef and cook until browned. Drain excess fat.
Sauté Vegetables:
Add the onion, garlic, and both bell peppers to the pot. Sauté until the vegetables are tender, about 5-7 minutes.
Add Tomatoes and Broth:
Stir in the diced tomatoes, tomato sauce, and beef broth. Bring to a simmer.
Season:
Add the cooked rice, Italian seasoning, salt, and pepper. Stir well and let it simmer for about 20 minutes.
Serve:
Garnish with fresh parsley if desired and enjoy hot!
Tips
You can use any color of bell peppers for added variety.
