Ingredients:
For the Crust:
2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup melted butter
For the Filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 tablespoon orange zest
1 teaspoon vanilla extract
2 tablespoons orange juice
1 cup heavy cream, whipped
1 package (3 oz) orange-flavored gelatin (Jell-O)
1/2 cup boiling water
1/2 cup cold water
For the Topping:
Whipped cream for garnish
Orange slices and zest for garnish
Directions:
Prepare the Crust:
In a medium bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of a 9-inch springform pan to create an even layer. Place in the fridge to set while preparing the filling.
Make the Gelatin:
In a small bowl, dissolve the orange gelatin in boiling water. Add the cold water and stir. Let it cool for 10-15 minutes until it reaches room temperature but hasn’t yet set.
Prepare the Filling:
In a large bowl, beat the softened cream cheese, powdered sugar, orange zest, vanilla extract, and orange juice until smooth and creamy. Slowly add the cooled orange gelatin and continue to mix until well combined.
Fold in Whipped Cream:
Gently fold in the whipped cream until the mixture is light and fluffy.
Assemble the Cheesecake:
Pour the orange cheesecake mixture over the prepared crust. Smooth the top with a spatula. Refrigerate for at least 4 hours, or until firm.
Garnish & Serve:
Once set, remove from the springform pan and garnish with whipped cream, orange slices, and a sprinkle of orange zest. Slice and enjoy!
