Chocolate and custard cake

Ingredients:

For the cake:

  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup milk
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla extract

For the custard:

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 4 large egg yolks
  • 1 teaspoon vanilla extract

For assembly and topping:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the vegetable oil, milk, vinegar, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Pour the batter into the prepared cake pan and spread it out evenly.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. While the cake is baking, prepare the custard. In a saucepan, heat the milk over medium heat until it just starts to simmer.
  8. In a mixing bowl, whisk together the sugar, cornstarch, and egg yolks until smooth and well combined.
  9. Slowly pour the hot milk into the egg mixture, whisking constantly to prevent the eggs from scrambling.
  10. Return the mixture to the saucepan and cook over medium heat, stirring constantly, until it thickens and comes to a boil.
  11. Remove the custard from the heat and stir in the vanilla extract. Let it cool slightly.
  12. Once the cake is baked and cooled, spread the custard evenly over the top of the cake.
  13. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form. Spread the whipped cream over the custard layer.
  14. Optionally, garnish the cake with chocolate shavings or a dusting of cocoa powder.
  15. Refrigerate the cake for at least 1 hour before serving to allow the custard and whipped cream to set.
