Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- 2 eggs
- 2 tablespoons olive oil
- Lemon wedges, for serving
Instructions:
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and pepper on both sides.
- In a shallow dish, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, and paprika.
- In another shallow dish, whisk the eggs until well beaten.
- Dip each chicken breast into the beaten eggs, then dredge it in the Parmesan breadcrumb mixture, pressing gently to adhere.
- Heat the olive oil in an oven-safe skillet over medium-high heat. Once hot, add the chicken breasts to the skillet and cook for 3-4 minutes on each side, or until golden brown.
- Transfer the skillet to the preheated oven and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the skillet from the oven and let the chicken rest for a few minutes before serving.
- Serve the Parmesan Crusted Chicken with lemon wedges on the side for squeezing over the chicken, if desired.
