Ingredients for the base
25 gr of almond flour
80 gr shredded coconut
50 grams of agave syrup
2 big dates
1 and a half tablespoon of melted coconut oil
2 scoops of orange juice
Zest of an Orange.
Ingredients for the stuffing
260g of soaked cashews*
60 gr coconut milk canned
50 gr coconut oil
50 grams of agave syrup
40 grams of honey
80 ml of orange juice
1 tablespoon of orange zest
1 scoop soaked goji berries
- the cashews can be soaked a few hours earlier, at least 6 hours or boil with water the cashews about 15 minutes.
Preparation
Preparation of the base
Put all the ingredients in a food processor or chopper and chop all together until you form a dough.
Put on the base of the mold that we have previously prepared with a circle on the base of baking paper and an acetate strip for the sides. Press with hands or spatula until it is well placed across the base. Make a reservation.
Preparation of the stuffing
The ingredients of the filling once all ready is to chop them well until the mixture is fine fine, but before you have to have ready the cashews previously soaked or boiled, drained and cold, melted coconut oil, and goji berries previously soaked in hot water to let them hydrate (skinned out).
We mince all the ingredients in a food processor until the mixture is fine. Goyi berries will give you a beautiful orange color so my recommendation is that you use it.
Pour all the mixture over the base and let it rest either in the fridge or in the freezer as you want to present it at least between 6 and 12 hours.
Decorate the top with fresh fruit, like orange slices, raspberries, strawberries, blueberries and whatever you crave.
