Ingredients:
For the crust:

  • 1 1/2 cups crushed graham crackers
  • 1/4 cup sugar
  • 1/3 cup unsalted butter, melted

For the cheesecake:

  • 2 packages (8 ounces each) cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice

For the lemon swirl:

  • 1/4 cup lemon curd

Directions:

  1. Prepare the crust:
  • Mix graham cracker crumbs, sugar, and melted butter until well combined. Press firmly into the bottom of a greased 8×8 inch baking dish.
  • Bake in a preheated 325°F oven for 10 minutes. Allow to cool.
  1. Make the cheesecake mixture:
  • Beat cream cheese with sugar until smooth. Add eggs one at a time, followed by vanilla, lemon zest, and lemon juice. Pour over the prepared crust.
  1. Add the lemon swirl:
  • Spoon lemon curd randomly over the cheesecake layer. Use a toothpick or knife to swirl the curd into the cheesecake.
  1. Bake for 35-40 minutes or until the center is just set. Cool completely, then refrigerate for at least 3 hours.
