Mango Salad with a Twinkle of Spicy
Ingredients:
2 ripe mangoes, peeled and cut into cubes
1 cucumber, peeled and sliced thinly
1 red pepper, cut into thin strips
1 red onion, sliced thinly
1 Red Chile, seedless and ground
1/4 cup fresh cilantro, chopped
2 scoops of lemon juice
1 tablespoon of soy sauce
1 teaspoon of honey
Salt and pepper to taste
Instructions:
In a large bowl, combine mango cubes, cucumber slices, red pepper strips, red onion slices, chopped chilli and chopped coriander.
In a small bowl, mix lemon juice, soy sauce, honey, salt and pepper until well combined.
Pour the dressing mixture over the mango salad and blend gently to coat all the ingredients.
Refrigerate the salad for at least 30 minutes before serving to allow the flavors to blend.
Serve the spicy mango salad as a side dish or as a light main course.
