Ingredients:
1 lb (450g) ground beef
6 slices bacon, chopped
1 onion, diced
2 cloves garlic, minced
1 cup frozen mixed vegetables (corn, carrots, peas)
2 tbsp all-purpose flour
1 cup beef broth
2 tbsp ketchup
1 tbsp Worcestershire sauce
Salt and pepper, to taste
4 cups mashed potatoes
1 cup shredded cheddar cheese
Instructions:
Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the bacon drippings in the skillet.
In the same skillet with the bacon drippings, add the ground beef and diced onion. Cook over medium-high heat until the beef is browned and the onion is softened, breaking up the beef with a spoon as it cooks.
Add the minced garlic to the skillet and cook for an additional 1-2 minutes, until fragrant.
Stir in the frozen mixed vegetables and cook for another 2-3 minutes, until heated through.
Sprinkle the flour over the beef mixture and stir until well combined. Cook for 1-2 minutes to cook out the raw flour taste.
Gradually add the beef broth to the skillet, stirring constantly to avoid lumps. Stir in the ketchup and Worcestershire sauce. Bring the mixture to a simmer and cook for 5-7 minutes, until thickened. Season with salt and pepper to taste.
Transfer the beef mixture to the prepared baking dish and spread it out evenly.
Spread the mashed potatoes over the beef mixture, smoothing it out with a spatula.
Sprinkle the shredded cheddar cheese over the mashed potatoes, followed by the cooked bacon pieces.
Place the baking dish in the preheated oven and bake for 20-25 minutes, until the cheese is melted and bubbly.
Once done, remove the Shepherd’s Pie from the oven and let it cool for a few minutes before serving.
