Pork Leg With Pineapple


Ingredients:

1 pork leg of approximately 2 kg
1 fresh pineapple, peeled and sliced
1/4 cup of honey
Juice of 2 lemons
c 1 large onion, cut into slices
4 cloves of garlic, chopped
1 tablespoon of fresh thyme
Salt and pepper to taste
1 cup pineapple juice
char 2 tablespoons of olive oil
How to Prepare:

Preheat the oven to 180°C.
Make small incisions on the pork leg and rub with salt, pepper, and thyme.
In a large skillet, heat the olive oil and seal the pork leg on all sides until golden brown.
Put the pork leg in an oven tray. Wrap it up with the onion and pineapple slices.
In a small bowl, mix pineapple juice, honey, and lemon juice. Pour this mixture over the pork leg.
Sprinkle minced garlic on top and cover everything with tin foil.
Bake for about 2.5 hours. For the last half an hour, remove the aluminum foil so that the surface becomes gold.
Remove from oven and let sit for 10 minutes before cutting.
Serve the pork chops with roasted pineapples and onions.
