potato roll with minced meat

Ingredients :

For the potato roll:

4 to 5 medium potatoes
Salt and ground black pepper to taste
1 tablespoon of olive oil

For the filling with minced meat:

300g minced meat (beef, pork or a mix)
1 medium onion, finely chopped
2 cloves of garlic, minced
1 red bell pepper, diced (optional)
1 teaspoon of paprika
1 teaspoon of ground cumin
1/2 tsp cayenne pepper (optional, adjust to your taste)
Salt and ground black pepper to taste
2 tablespoons of tomato concentrate
1/2 cup of water
50 g of grated cheese (cheddar, mozzarella, or other of your choice)

Instructions:

Preparation of potatoes:

Preheat your oven to 200°C (thermostat 6-7).
Peel the potatoes and grate them fine. Season them with salt and black pepper to your liking.

Cooking potatoes:

Spread the grated potatoes on a baking plate covered with sulfurized paper, forming a rectangle of about 25×35 cm.

Bask lightly with olive oil to enhance gold.

Bake in a preheated oven for about 20-25 minutes, or until potatoes are slightly golden brown and cooked through. Remove from oven and let cool slightly.

Preparation of minced meat filling:

While the potatoes are cooking, prepare the topping with ground beef.
In a skillet over medium heat, saute the onion and garlic in a little oil until golden brown and tender.

Add the minced meat and cook it by breaking it with a wooden spoon until it gets nicely golden brown.

Add the diced bell peppers (if using), paprika, ground cumin, cayenne pepper (if using), salt and pepper. Mix it up well.

Just add the tomato concentrate and water Let simmer for about 10 minutes until sauce thickens slightly. Correct the seasoning if necessary.

Assembling the roller:

Spread the minced meat filling evenly over the cooked and cooled potatoes.

Sprinkle grated cheese on top of the ground beef topping.

Roll the roll:

Gently, roll the roller from the longest side, helping you with sulfurized paper to lift the potatoes and roll it all in a cylinder.

Transfer the roller onto a clean cook plate by placing the joint down.

Final baking:

Put the roll back in the preheated oven and bake for another 15-20 minutes, or until cheese is melted and golden brown.

Service :

Remove from oven and let sit for a few minutes before slicing the roll into portions.

Serve hot, with a green salad or seasonal vegetables.
