Ingredients:
2 slices of sourdough bread
1 large peach, sliced
1/2 cup ricotta cheese
1 tablespoon honey
Fresh thyme sprigs
Olive oil for drizzling
Salt and pepper to taste
Directions:
Preheat a grill or grill pan over medium-high heat.
Drizzle the sourdough bread slices with olive oil on both sides.
Grill the bread for 2-3 minutes on each side, or until crispy and grill marks appear.
In a small bowl, mix the ricotta cheese with a pinch of salt and pepper.
Spread the ricotta mixture evenly over the grilled bread slices.
Grill the peach slices for 1-2 minutes on each side, until they are slightly caramelized.
Arrange the grilled peach slices on top of the ricotta-topped bread.
Drizzle with honey and garnish with fresh thyme sprigs.
Season with additional salt and pepper to taste.
