Mississippi Mud Potatoes


Ingredients:

  • 6 large potatoes, washed and scrubbed
  • 1/4 cup butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese, divided
  • 1/2 cup cooked and crumbled bacon
  • 1/4 cup chopped green onions
  • Salt and pepper to taste

Directions:

  1. Preheat your oven to 375°F (190°C).
  2. Peel and cut the potatoes into 1/4-inch slices. Place them in a pot of salted water and bring to a boil. Cook for about 10 minutes, or until tender but firm. Drain well.
  3. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook, stirring constantly, for about 1 minute to form a roux.
  4. Gradually whisk in the milk, continuing to stir until the sauce thickens and comes to a simmer.
  5. Remove the saucepan from the heat and stir in 3/4 cup of the shredded cheddar cheese, salt, and pepper.
  6. In a large baking dish, layer half of the sliced potatoes, half of the bacon, and half of the green onions. Pour half of the cheese sauce over the top.
  7. Repeat the layers with the remaining potatoes, bacon, and green onions. Pour the remaining cheese sauce over the top and sprinkle the remaining 1/4 cup of shredded cheddar cheese.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.
