Ingredients:
- 6 large potatoes, washed and scrubbed
- 1/4 cup butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup shredded cheddar cheese, divided
- 1/2 cup cooked and crumbled bacon
- 1/4 cup chopped green onions
- Salt and pepper to taste
Directions:
- Preheat your oven to 375°F (190°C).
- Peel and cut the potatoes into 1/4-inch slices. Place them in a pot of salted water and bring to a boil. Cook for about 10 minutes, or until tender but firm. Drain well.
- In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook, stirring constantly, for about 1 minute to form a roux.
- Gradually whisk in the milk, continuing to stir until the sauce thickens and comes to a simmer.
- Remove the saucepan from the heat and stir in 3/4 cup of the shredded cheddar cheese, salt, and pepper.
- In a large baking dish, layer half of the sliced potatoes, half of the bacon, and half of the green onions. Pour half of the cheese sauce over the top.
- Repeat the layers with the remaining potatoes, bacon, and green onions. Pour the remaining cheese sauce over the top and sprinkle the remaining 1/4 cup of shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbling.
