Spinach and Feta Chicken Rolls

Tender chicken breasts rolled with a savory filling of spinach, feta, and sun-dried tomatoes, making a delicious and elegant main dish.

Ingredients:

4 boneless, skinless chicken breasts
1 tablespoon olive oil
1 onion, finely chopped
2 cloves garlic, minced
5 ounces fresh spinach, chopped
1/2 cup crumbled feta cheese
1/4 cup sun-dried tomatoes, chopped
Salt and pepper to taste
Toothpicks for securing
Directions:

Preheat your oven to 375°F (190°C).
Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/4-inch thickness using a meat mallet or rolling pin.
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes. Add the minced garlic and cook for another minute.
Stir in the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let the mixture cool slightly.
In a mixing bowl, combine the cooked spinach mixture with the crumbled feta cheese and chopped sun-dried tomatoes. Season with salt and pepper to taste.
Spread the spinach and feta mixture evenly over each flattened chicken breast. Roll up each breast tightly, starting from the shorter end, and secure with toothpicks.
Place the chicken rolls seam-side down in a baking dish. Season the tops with a little more salt and pepper.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and no longer pink in the center.
Remove the toothpicks before serving.
Enjoy your flavorful and beautifully rolled chicken dish!
