Peaches and Cream Cheesecake Bars

Ingredients
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup sugar
1/2 cup unsalted butter, melted
For the Cheesecake Filling:
2 (8 oz) packages cream cheese, softened
1/2 cup sugar
2 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 cups fresh or canned peaches, diced
Instructions
Prepare the Crust:

Preheat your oven to 350°F (175°C).
In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
Press the mixture into the bottom of a greased 9×13-inch baking dish. Bake for about 10 minutes, then let it cool.
Make the Cheesecake Filling:

In a large mixing bowl, beat the cream cheese and sugar until smooth.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until combined.
Gently fold in the diced peaches.
Assemble and Bake:

Pour the cheesecake filling over the cooled crust.
Bake for 30-35 minutes or until the center is set.
Cool and Serve:

Let the bars cool completely, then refrigerate for at least 2 hours before slicing. Serve chilled.
