Ingredients:
For the Burgers:
1 lb ground beef (80/20 for juiciness)
1 jalapeño, thinly sliced
1 small onion, thinly sliced
4 slices cheddar or pepper jack cheese
4 burger buns
2 tbsp butter, softened (for toasting buns)
Salt and pepper, to taste
2 tbsp oil (for cooking)

Sliced pickles
Lettuce
Tomato
Ketchup, mustard, or mayo
Instructions:
- Prep the Vegetables:
Slice the jalapeño and onion thinly.
Set aside. - Form the Beef Patties:
Divide the ground beef into 4 equal balls. Do not press them into patties yet.
Season the beef balls with salt and pepper. - Heat the Skillet:
Heat a large cast-iron skillet or griddle over medium-high heat.
Add 1 tbsp oil to the pan and let it get hot. - Cook the Onions and Jalapeños:
Add the sliced onions and jalapeños to the hot skillet and sauté until softened and slightly caramelized, about 5-6 minutes.
Remove from the pan and set aside. - Smash the Burgers:
Add the remaining 1 tbsp oil to the same skillet. Place the beef balls in the hot skillet, leaving some space between each.
Using a heavy spatula or burger press, smash the beef balls flat into thin patties.
Cook for about 2-3 minutes on the first side until the edges become crispy. - Flip and Add Cheese:
Flip the patties, add a slice of cheese on each patty, and cook for another 1-2 minutes until the cheese melts. - Toast the Buns:
While the patties are cooking, butter the burger buns and toast them in the skillet until golden. - Assemble the Burgers:
Place the cheesy smash patties on the bottom buns.
Top with the jalapeño-onion mixture and any other desired toppings.
Close the burgers with the top buns.
