Pumpkin Caramel Cheesecake Delight

Ingredients:

  • 2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 3 packages 8 oz cream cheese, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup pumpkin puree
  • 3 large eggs
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 cup caramel sauce plus more for drizzling

Directions:

  1. Preheat the oven to 325F 160C. Combine graham cracker crumbs and melted butter, press into the bottom of a springform pan.
  2. Beat cream cheese, sugar, and brown sugar until smooth. Add pumpkin puree, eggs, pumpkin pie spice, and vanilla, mixing until combined.
  3. Pour half the batter over the crust, drizzle with caramel sauce, then top with remaining cheesecake batter.
  4. Bake for 55-60 minutes, until the center is set. Allow it to cool, then refrigerate for at least 4 hours.
  5. Drizzle with extra caramel sauce before serving.
