Ingredients:
- 2 cups graham cracker crumbs
- 1/4 cup melted butter
- 3 packages 8 oz cream cheese, softened
- 1 cup sugar
- 1/2 cup brown sugar
- 1 cup pumpkin puree
- 3 large eggs
- 2 tsp pumpkin pie spice
- 1 tsp vanilla extract
- 1/4 cup caramel sauce plus more for drizzling
Directions:
- Preheat the oven to 325F 160C. Combine graham cracker crumbs and melted butter, press into the bottom of a springform pan.
- Beat cream cheese, sugar, and brown sugar until smooth. Add pumpkin puree, eggs, pumpkin pie spice, and vanilla, mixing until combined.
- Pour half the batter over the crust, drizzle with caramel sauce, then top with remaining cheesecake batter.
- Bake for 55-60 minutes, until the center is set. Allow it to cool, then refrigerate for at least 4 hours.
- Drizzle with extra caramel sauce before serving.
