Crockpot Chicken and Gravy

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 packet (1 ounce) dry onion soup mix
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1/2 cup chicken broth or water
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons cold water (optional, for thickening)

Instructions:

  1. Place the chicken breasts in the bottom of the crockpot.
  2. In a mixing bowl, combine the dry onion soup mix, condensed cream of chicken soup, chicken broth or water, garlic powder, dried thyme, salt, and pepper. Stir until well combined.
  3. Pour the soup mixture over the chicken breasts in the crockpot, covering them evenly.
  4. Cover and cook on low heat for 6-8 hours or on high heat for 3-4 hours, until the chicken is cooked through and tender.
  5. If you prefer a thicker gravy, about 30 minutes before serving, whisk together the cornstarch and cold water in a small bowl until smooth. Stir the cornstarch mixture into the crockpot with the chicken and gravy. Continue cooking for an additional 30 minutes, until the gravy has thickened.
  6. Once the chicken is cooked and the gravy has reached your desired consistency, serve the chicken and gravy hot over mashed potatoes, rice, or noodles.
