- 4 large eggs
- 120g granulated sugar
- 120g cake flour
- 2 tablespoons honey
- 2 tablespoons milk
- Vegetable oil for greasing the pan
Instructions:
- Preheat your oven to 320°F (160°C). Grease a 9×5 inch (23×13 cm) loaf pan with vegetable oil and line it with parchment paper.
- Separate the egg yolks from the whites. Place the egg whites in a large mixing bowl and beat them until stiff peaks form.
- In another mixing bowl, beat the egg yolks and granulated sugar together until pale and creamy.
- Add honey and milk to the egg yolk mixture, and mix until well combined.
- Sift the cake flour into the egg yolk mixture and mix until smooth.
- Gradually fold in the beaten egg whites into the egg yolk mixture, one-third at a time, until well combined and no white streaks remain.
- Pour the batter into the prepared loaf pan and tap the pan gently on the counter to remove any air bubbles.
- Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
- Once cooled, slice and serve the Castella cake. Enjoy its soft and fluffy texture!
