CASTELLA CAKE

Ingredients:

  • 4 large eggs
  • 120g granulated sugar
  • 120g cake flour
  • 2 tablespoons honey
  • 2 tablespoons milk
  • Vegetable oil for greasing the pan

Instructions:

  1. Preheat your oven to 320°F (160°C). Grease a 9×5 inch (23×13 cm) loaf pan with vegetable oil and line it with parchment paper.
  2. Separate the egg yolks from the whites. Place the egg whites in a large mixing bowl and beat them until stiff peaks form.
  3. In another mixing bowl, beat the egg yolks and granulated sugar together until pale and creamy.
  4. Add honey and milk to the egg yolk mixture, and mix until well combined.
  5. Sift the cake flour into the egg yolk mixture and mix until smooth.
  6. Gradually fold in the beaten egg whites into the egg yolk mixture, one-third at a time, until well combined and no white streaks remain.
  7. Pour the batter into the prepared loaf pan and tap the pan gently on the counter to remove any air bubbles.
  8. Bake in the preheated oven for about 40-45 minutes, or until a toothpick inserted into the center comes out clean.
  9. Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
  10. Once cooled, slice and serve the Castella cake. Enjoy its soft and fluffy texture!
