Ingredients:
- 2 cups whole milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- Pinch of salt
- 2 large egg yolks
- 2 teaspoons vanilla extract
Instructions:
- In a medium saucepan, combine the milk, sugar, cornstarch, and salt over medium heat. Whisk until the mixture is smooth and the sugar has dissolved.
- In a separate bowl, whisk the egg yolks until smooth. Gradually add a small amount of the hot milk mixture to the egg yolks while whisking continuously. This will temper the eggs and prevent them from curdling.
- Pour the egg yolk mixture back into the saucepan with the remaining milk mixture, whisking constantly.
- Cook the mixture over medium heat, stirring constantly, until it thickens and comes to a gentle boil, about 5-7 minutes.
- Remove the saucepan from the heat and stir in the vanilla extract.
- Pour the pudding into serving dishes or a large bowl. Press a piece of plastic wrap directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate the pudding for at least 2 hours, or until chilled and set.
- Serve the vanilla pudding cold, either on its own or with toppings such as fresh berries, whipped cream, or a sprinkle of cinnamon.
This Vanilla Pudding is creamy, comforting, and incredibly easy to make with just a few simple ingredients. Enjoy!
