  • 4 large eggs
  • 1 can (14 oz/400g) sweetened condensed milk
  • 1 can (12 oz/340g) evaporated milk
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat your oven to 350°F (175°C). Place a roasting pan filled with about an inch of water in the oven to create a water bath for baking the flan.
  2. In a saucepan over medium heat, combine the granulated sugar and water for the caramel. Cook, stirring occasionally, until the sugar has dissolved.
  3. Once the sugar has dissolved, stop stirring and let the mixture cook until it turns a deep amber color, swirling the pan occasionally to ensure even caramelization. Be careful not to let it burn.
  4. Quickly pour the caramel into the bottom of a 9-inch round cake pan or flan mold, swirling to coat the bottom evenly. Set aside to cool and harden.
  5. In a large mixing bowl, whisk together the eggs, sweetened condensed milk, evaporated milk, and vanilla extract until smooth and well combined.
  6. Pour the egg mixture over the cooled caramel in the cake pan or flan mold.
  7. Carefully place the cake pan or flan mold into the roasting pan with the water bath in the preheated oven.
  8. Bake for 50-60 minutes, or until the flan is set and a toothpick inserted into the center comes out clean.
  9. Remove the flan from the oven and let it cool to room temperature.
  10. Once cooled, cover the flan with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, to chill and set completely.
  11. To serve, run a knife around the edges of the flan to loosen it from the pan. Place a serving plate over the top of the pan, then quickly invert the pan to release the flan onto the plate.
  12. Slice and serve the Easy Egg Flan chilled, either plain or with whipped cream or fresh fruit on top.
