Crockpot Creamy Potato & Hamburger Soup

Ingredients:

  • 1 1/2 pounds ground beef
  • 1 medium white onion, peeled and cut into cubes
  • 1 large garlic clove, minced
  • 6 cups chicken broth
  • 6 cups russet potatoes, peeled and cubed
  • 2 cups frozen vegetable mix
  • 3 teaspoons basil
  • 2 teaspoons dried parsley flakes
  • 1 1/2 cups milk
  • 2 teaspoons cornstarch
  • 8 ounces Velveeta cheese, cubed

Directions:

  1. In a large skillet, cook the ground beef and onions over medium heat until the onions soften and the ground beef is browned. Strain the grease and transfer the mixture to a saucepan or stockpot.
  2. Add minced garlic to the saucepan or
  3. stockpot.
  4. Add potatoes, chicken broth, frozen vegetable mix, basil, and dried parsley flakes to the saucepan or stockpot.
  5. Cook in a slow cooker on low for 6-8 hours, on high for 3-4 hours, or simmer on the stove until the potatoes are tender and beginning to soften.
  6. In a small bowl, whisk together the cornstarch and milk until well combined.
  7. Stir the milk mixture into the soup.
  8. Add the cubed Velveeta cheese to the soup and let it melt, stirring occasionally.
  9. Once the cheese is completely melted, ladle the soup into bowls and serve.
