Ingredients:
For the Cake:
1 cup all-purpose flour
1 cup granulated sugar
1/2 cup unsweetened cocoa powder
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup whole milk
1/4 cup vegetable oil
1 large egg
1 teaspoon vanilla extract
1/2 cup boiling water
For the Mocha Buttercream Frosting:
1 cup unsalted butter, softened
3 1/2 cups powdered sugar, sifted
1/2 cup unsweetened cocoa powder
1/2 teaspoon salt
2 teaspoons vanilla extract
1-2 tablespoons brewed coffee, cooled
Directions:
Preheat oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
Add milk, oil, egg, and vanilla to the flour mixture and mix until well combined.
Carefully stir in boiling water (the batter will be thin). Pour the batter into the prepared cake pan.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
For the Frosting:
Beat the butter on high until light and fluffy. Gradually add powdered sugar and cocoa powder, beating until well combined.
Add salt, vanilla, and 1 tablespoon of coffee, mixing well. If the frosting is too thick, add more coffee until the desired consistency is reached.
Frost the cooled cake, and enjoy!
