Total Time: 30 minutes
Ingredients:
For the Steak Bites:
1 pound sirloin steak or ribeye, cut into bite-sized cubes
Salt and black pepper, to taste
2 tablespoons olive oil
4 cloves garlic, minced
2 tablespoons unsalted butter
1 tablespoon fresh parsley, chopped (for garnish)
For the Mashed Potatoes:
2 pounds russet potatoes, peeled and cubed
1/2 cup milk (or heavy cream for richer flavor)
1/4 cup unsalted butter
Salt and black pepper, to taste
Optional: 1/4 cup sour cream or cream cheese for creaminess
Instructions:
- Prepare the Mashed Potatoes:
In a large pot, add the cubed potatoes and cover them with water. Bring to a boil over medium-high heat.
Cook until the potatoes are fork-tender, about 15-20 minutes. Drain well.
In the same pot, return the drained potatoes and add the milk, butter, salt, and pepper. Mash until smooth and creamy. For extra creaminess, mix in sour cream or cream cheese. Set aside and keep warm.
- Cook the Steak Bites:
While the potatoes are cooking, season the steak cubes with salt and black pepper.
In a large skillet, heat the olive oil over medium-high heat. Add the steak bites in a single layer, making sure not to overcrowd the pan. Cook for about 2-3 minutes on each side for medium-rare (adjust the time based on your preferred doneness).
Once the steak bites are cooked, add the minced garlic and butter to the skillet. Stir to coat the steak in the garlic butter and cook for an additional minute until the garlic is fragrant and the butter is melted.
- Serve:
Place a generous scoop of mashed potatoes on each plate. Top with the garlic butter steak bites and drizzle any remaining garlic butter from the skillet over the top.
Garnish with chopped fresh parsley for added flavor and presentation.
Tips:
For added flavor, you can marinate the steak bites in your favorite marinade for a few hours before cooking.
Feel free to customize the mashed potatoes by adding garlic or cheese for extra flavor.
