Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tablespoons soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon hoisin sauce
- 1 teaspoon cornstarch
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 bell pepper, cut into strips
- 1 cup snow peas
- 1/2 cup cashews, toasted

Instructions:
- In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, and cornstarch. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and cook for about 1 minute until fragrant.
